This is an original, simple and versatile recipe and it is a good option as a winter dessert or entrée, whether we want to make it more sweet or savory.
INGREDIENTS FOR 2 PEOPLE
- 2 persimmon
- 1 cup almonds or cashew nuts (presoaked for 6 hours)
- 10 mint leaves
- STEP 01:
Cut the persimmon into thin slices
- STEP 02:
Prepare the ravioli filling by blending the nuts with the mint leaves until you get a paste. As alternatives to mint, you can use basil, bitter cocoa or any other ingredient that compliments the sweet taste of the persimmon
- STEP 03:
Put some of the paste between two slices and leave in the dehydrator for 2 hours, or in the oven at the minimum temperature for half an hour.
- STEP 04:
If the filling is savory, season with oil, salt and pepper; if it is sweet, use melted dark chocolate.
